Oh, I used 2 dashes as a dash is longer than a hyphen and when typing it is an easier way to illustrate this. In my example, as the clause was a list, it would not be possible to put a comma. You would normally use a comma? if there is 1 appositive. eg "The best waiter, Alain, can speak three languages." not "The best waiter -- Alain -- can speak three languages."
